It&#8217;s never just carrot and coriander, today I threw in a couple of sweet potatoes, some butternut squash and a chopped red onion, all sweated nicely before drowned in chicken stock and cooked till soft and easy to blitz. When creamy, thick and lovely, I season it well with ground coriander, salt and pepper and right before serving, a good amount of fresh, chopped coriander and a few parmesan shavings. A lovely, warm, crunchy bread- a must.
